Whole Wheat Banana Nut Bread



Daddy Fuller always seems to think he needs to buy TONS of bananas. "I'll eat them for breakfast" he says "I'll make a smoothie" he chimes "The kids LOVE bananas!". No the truth is, no one eats them, they end up getting brown and mushy.  And no one really seems to like them much either. That is, unless they are cooked up in some yummy banana bread! It still counts as a fruit for the day right...... ;)

Ingredients:
3/4 cup of butter, softened
1 (8 ounce) package cream cheese, softened
3 very ripe bananas, mashed
2 cups sugar
2 eggs
1/2 teaspoon vanilla extract
1/2 teaspoon cinnamon
1/8 teaspoon nutmeg
1 cup all purpose flour
2 cups whole wheat flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup chopped walnuts

Directions:

Beat butter and cream cheese with an electric mixer until creamy.

 Mix in mashed bananas. Gradually add in sugar. Add eggs one at a time beating until just blended after each addition.  Add in vanilla, cinnamon, and nutmeg.


Combine flours and next 3 ingredients. Gradually add to banana mixture, beating at low speed until just blended.  Stir in walnuts.







Spoon batter into two well greased 8 X 4 in loafpans.  Bake at 350F for one hour or until toothpick inserted comes out clean.  Cool bread on wire racks 10 minutes then remove from pans and contine to cool on racks 30 minutes before slicing.

  1. Oh yum! I'm copying this recipe -- I like to use Whole wheat, but I never thought about trying cream cheese with it!
